The Kitchen

Three ingredients, if we can help it.

Aurelia began with one wood oven and a rule we still argue about: nothing goes on the plate that cannot explain why it is there. The fire does most of the seasoning. Salt and olive oil do the rest.

Pasta is rolled at six in the morning, cut by hand, and cooked the same night — never the next. Fish arrives whole and is broken down here. Vegetables come from within two hundred miles, and when they stop, so does the dish.

If a plate needs more than three things to be delicious, we have not understood it yet.

A room built around one long table.

The building was a printing house, then nothing for eleven years. We kept the floor, the brick and the light, and put a twelve-seat table in the middle of the room — the seat everybody now asks for.

There is no tasting menu and no theatre. There is a fire, a small list of Italian wine chosen by growers we have met, and a kitchen that would rather serve four perfect plates than fourteen clever ones.

    Aperitivo

    The bar opens first. Negroni sbagliato, olives warmed in oil, and the last of the daylight coming down Hudson Street.

    The Pass

    The room fills, the oven is at its hottest, and every plate crosses the pass under the lamps before it reaches you.

    Amaro, an espresso if you insist, and no one hurrying you toward the door. The kitchen eats at eleven.

Book a table.

Tables open thirty days ahead. We hold your table for fifteen minutes. For parties of seven or more, or anything that matters more than usual, call us and we will arrange it properly.

Before you come

Questions we are asked most.

How far ahead can I book?

Thirty days, to the minute — the book opens at 10:00 am each morning for the same date next month. A handful of bar seats are kept back for walk-ins every night.

Do you take walk-ins?

Yes. Eight seats at the bar and the two window tables are held for walk-ins from 5:30 pm, first come, first served.

Can you cook for dietary requirements?

Tell us when you book. Vegetarian and gluten-free versions of most of the menu are made to order; we make fresh pasta daily, so gluten-free needs a day’s notice.

Is there a dress code?

No. Come as you would to a good friend’s house for dinner.

Can you host a private dinner?

The long table seats twelve and can be taken privately Tuesday to Thursday. Write to us and we will send the menus and the numbers.

Do you have parking?

There is a garage on Vandam at Varick, ninety seconds away, and street parking on Hudson after 7 pm.
